Dressler’s Spotlight: Kevin McNamara

Meet Kevin McNamara, Bar Manager at Dressler’s Restaurant in Birkdale Village. Kevin has been with Dressler’s for 19 years. Kevin and his wife Liz live in Charlotte with their adorable six-year-old daughter, Maeve. Kevin (whose nickname is Kelvin) is an avid Buffalo Bills fan.

How long have you been the Bar Manager at Dressler’s? ”Long enough to have gone through three dish machines, 112 servers, two carpets, seven presidents, and 45 losing Bills’ seasons.”

What do you like most about your job? ”Building long term relationships with the guests and working with Jon Dressler.”

What character traits do you need to run a successful bar? ”Great listening skills, self-deprecation, and a sparkling personality.”

What are some of your favorite drinks to make at Dressler’s? ”Anything that is not made in a blender.  My specialties are ‘two drinks’–which are any drinks made with two ingredients such as vodka/soda and scotch/ice.”

What are some of the most popular drink requests from customers?  “Birkdale Breeze and Chocolate Martini.”

Meet Jon Dressler of Dressler’s Restaurant. When Jon and his wife Kim opened their first Dressler’s Restaurant in 2003 in Birkdale Village (the Metro location opened in 2010), their goal was to create a beautiful and welcoming setting where their guests could eat wonderful food and feel like a part of their family. Over the past ten years, they have accomplished just that! 

What do you like about owning Dressler’s? ”Actually, my wife owns the restaurant, I just work here! I love meeting great people, visiting the wine country, and of course eating at Dressler’s!”

What are some of the challenges of running a successful restaurant? ”Every day presents a different set of challenges. It is always dynamic…but that makes it fun too!”

Do you like to cook? ”Love to eat, love to cook!”

What are some of your favorite dishes to eat at Dressler’s? ”Calamari, Heart of Ribeye, and anything my mother makes for dessert!”

What do you think are some of the customers’ favorites? ”Halibut, Calamari, and my bad jokes.”

What qualities make Dressler’s an exceptional restaurant? ”We have very caring and passionate people that work with us, and who truly enjoy serving our wonderful guests.”

Why do people like dining at Dressler’s? ”We create a very familial atmosphere for both our staff and guests. People enjoy the hospitable treatment that we offer.”

What do you like most about your job? “I love the personal interaction with different people every day and I love my days off on the golf course!”

Dressler’s Spotlight: Joan Dressler

JoanDresslerMeet Joan Dressler of Dressler’s Restaurant. Joan bears the proud title of “Mom” at the restaurant (as in Mom’s New York Cheesecake, Mom’s Apple Cake, and Mom’ Carrot Cake), and is the creator of some of Dressler’s most popular sweet treats.

Some of Joan’s favorite dishes growing up including spaghetti and meatballs, lamb chops with mint jelly, and roast chicken. She began cooking when she was about 12 years old, first learning how to cook potatoes with her mother. She also owned her own catering business. Joan currently prepares deliciously famous desserts at Dressler’s.

Joan, why do you like making desserts? “I love sweets, so making treats for others is very fulfilling!”

What are some of your favorite desserts to make at Dressler’s? “Carrot cake with walnut cream cheese frosting, cheesecakes, and apple cake.”

Who does the cooking at your home? ”I do.”

What do you enjoy more, cooking or eating? “Eating!”

Why do people love dining at Dressler’s?  “For the outstanding food–especially the desserts!”

What’s your cooking style?  ”Simplicity.”

Why do you love your job? “It lets me use my creativity.”

Any words of wisdom? “Eat lots of desserts!”

Dressler’s Spotlight: Chef Scott

Chef ScottMeet Scott Hollingsworth, Executive Chef at Dressler’s Restaurant.

Chef Scott has more than 25 years of professional experience in the restaurant business. He joined Dressler’s Restaurant in Lake Norman in October 2005.

Growing up in Cornelius, some of Chef Scott’s favorite foods included tomato sandwiches from the garden and Sunday dinner at his grandparents’ house. He developed a love for cooking at a young age, helping out in the kitchen when he was a kid. By the time he was a teenager, he was cooking for his family. The first thing he learned to cook was fried chicken (thanks to his Mom). To this day, Chef Scott prepares the meals in his own home.

Chef Scott, what do you enjoy more, cooking or eating? “Eating, definitely!”

Name one of your favorite dishes to make at Dressler’s. “North Carolina Trout with foraged mushrooms. I like that the trout and mushrooms are local and I’ve enjoyed building a relationship with the family that raises the trout.”

What qualities make a great chef? ”Experience.  An even temper.  Using salt and pepper.”

What makes Dressler’s special?  ”Every person who comes into Dressler’s is important. They are here for a superb dining experience, and that is exactly what we strive to give them. It’s all about the service, the food, and the atmosphere.”

Why do people love dining at Dressler’s?  “Warmth of service and delicious food.”

What’s your cooking style?  ”Southern Eclectic.”

And your philosophy when it comes to food? “Keep it simple.  Don’t get in the way of the food.”

Do you love being a chef? “Absolutely. It’s a lifestyle.”
